The other evening my hubby and I felt the need for some comfort food (sick baby, broken dishwasher, it all takes a toll); where I would immediately gravitate towards mashed potatoes and chocolate cake he had a craving for arroz con leche (literal translation rice with milk, pretty much the same as rice pudding) the way his mom made it.
He made a quick trip to the store to buy sweetened condensed milk; an essential ingredient, and 45 minutes later I was enjoying THIS
Here is how it was done:
2 cups milk
1 cup water
1 1/2 tsp vanilla
white rice (ah! we just tossed it in I have no idea how much!)
1/2 cinnamon stick
1 can La Lechera (or any brand) sweetened condensed milk

Bring to a boil the milk and water.
Add vanilla, cinnamon stick and rice. Let cook.
When rice is half cooked add the can of sweetened condensed milk.
Cook until rice is done.
Put some in a dish sprinkle with ground cinnamon and ENJOY!
So easy and warm and yummy- it is also great cold right out of the fridge! I will be having some for breakfast tomorrow

Cinnamon …. Yum. So …. read an article that cinnamon makes you happy!! Also supposedly helps to “kill” sugar cravings.
Try a dash in your coffee tomorrow morning!
